A very low-glycemic, colorful dish full of vegetables. Each serving has a glycemic load of 9. Serve as is, or with rice or pasta.

Recipe Ingredients for Ratatouille (From "Culinary Journey to the Mediterranean")

8 T olive oil
1 small eggplant
4 small zucchini, chopped
2 red peppers, chopped
2 small onions
4 cloves garlic
28 oz crushed tomatoes
2 T fresh basil, chopped

Recipe Directions for Ratatouille (From "Culinary Journey to the Mediterranean")

Cut eggplant into 1" cubes. Place in colander and add a few pinches of salt. Let drain for 30 minutes. Meanwhile, cut zucchini, peppers, and onion into small chunks, and mince garlic cloves. Drain tomatoes. Heat 4 tablespoons of olive oil in a large saute pan, and saute eggplant for about 6 or 7 minutes. Push off to the edges of the pan, and add 3 T of olive oil. Add zucchini, peppers, onions and garlic. Saute for about 5 minutes, then push off to the edges of the pan. Add the rest of the olive oil and the tomatoes, and saute for 3 minutes. Combine all ingredients and cover for 15 - 20 minutes until veggies are softened. Serve with fresh chopped basil and parmesan cheese, and can be served on a bed of cooked pasta.
