Improvised when my eggplant proved to be bad and I still had my heart set on ratatouille.

Recipe Ingredients for Ratatouille Chicken Bake

2 tablespoons olive oil
1 1/2 cups green pepper, sliced
3 cups onion, sliced
2 small zucchini, sliced into strips
18 oz chicken breast
3 tablespoons parmesan cheese
2 tablespoons bread crumbs
14 oz stewed tomatoes, chopped
2 whole tomatoes, sliced
3 cloves garlic, sliced thin
1 tablespoon mixed herbs

Recipe Directions for Ratatouille Chicken Bake

  1. Slice zucchini into strips 2" long and 3/8 inch thick. Place on paper towels and lightly salt each side.

  2. While the zucchini "sweats", slice the onion, pepper and garlic.

  3. Place the chicken breast in Foreman-style grill, sprinkle with herbs d'provence, and cook completely.

  4. Thinly coat saute pan with olive oil over and heat over medium high heat.

  5. When pan is heated, add zucchini strips that you have blotted dry and brown lightly on both sides. Do not over cook. You want them to be intact.

  6. Remove zucchini to paper towel and add onions. Saute until softening, add green pepper and garlic until just beginning to soften. Add tomatoes and herbs and allow to heat through.

  7. In shallow casserole, place half the onion/tomato mixture, layer with all the zucchini.

  8. Sprinkle this layer with one tablespoon italian seasoned bread crumbs and one tablespoon parmesan.

  9. Layer with remaining tomato/onion mixture. Place chicken breasts. Top with slices of fresh tomato and two tablespoons parmesan.

  10. Cover loosely with foil and bake at 350 for 30-45 mintues until hot and bubbling.

  11. Very nice served over basmati rice.
