Recipe Ingredients for Ratatouille - Camille's

4 cup, cubes Eggplant
3 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 1/2 cup, chopped Onions
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
2 cup, chopped Peppers, Sweet, Green
3 tbsp Oil Olive Extra Virgin
1 tsp Salt, Table
3 clove Garlic

Recipe Directions for Ratatouille - Camille's

Cube eggplant and add salt. Allow to drain for 15 minutes in a colander. Meanwhile, chop all the veggies. Heat 1 Tbsp. oil, add chopped garlic and thinly sliced onion and stir fry until tender crisp. Remove from pan. Drain eggplant and add 2 Tbsp. oil to pan. Stir fry eggplant for 4 minutes, then add chopped zucchini, pepper, and tomatoes. Stir fry 4 more minutes, then add onion and simmer for 2-3 more minutes. Add spices: 1/2 tsp EACH of dried oregano, dried basil, red pepper flakes, freshly ground black pepper, fennel seed, and crushed coriander or can substitute ground cumin. Stir and serve as a side dish or main dish.
