Recipe Ingredients for Ratatouille au Gratin

2 tbsp olive oil
2 onions, sliced
3 garlic cloves, chopped
1 red bell pepper, cored & sliced
1/2 cup basil leaves, fresh , packed & chopped
1 tbsp fresh thyme, chopped
14 oz tomatoes, chopped & drained
1 tbsp red wine vinegar
1/2 tsp salt
1/2 tsp pepper
2 squash, summer, small, sliced into thin rounds
2 zucchini, small, sliced into thin rounds
2 eggplants, small, sliced into thin rounds
1 1/2 cups cheese, emmental

Recipe Directions for Ratatouille au Gratin

  1. In skillet over medium, heat olive oil

  2. Add onions, garlic & bell pepper

  3. Saute for 10 minutes or until tender

  4. Add basil, thyme, tomatoes, vinegar, salt & pepper

  5. Bring to a simmer & cook for 5 more minutes, stirring occasionally

  6. Spread a third fo the tomato mix over bottom of deep pie pan

  7. Using a third of each vegetable, arrange one layer each of squash, zucchini & eggplant rounds over tomato mixture, alternating vegetables & overlapping slightly

  8. Sprinkle 1/2 cup of the cheese over that

  9. Repeat layering tow more times, ending with cheese

  10. Bake at 350F for 45 minutes or until vegetables are tender when pierced with a knife

  11. Increase heat to broil & cook for another 2-3 minutes to lightly brown the top
