Recipe Ingredients for ratatouille 2 (adapted from Moosewood)

1 tbsp olive oil
4 cloves garlic
300 g onion, raw chopped
400 g eggplant, raw
175 g zucchini, raw
250 g green pepper, raw
1 1/2 tsp cumin
2 tsp chili powder
14 1/2 ounces tomatoes, no salt added

Recipe Directions for ratatouille 2 (adapted from Moosewood)

  1. Heat oil in dutch oven. Add garlic and onion and saute about 5 min.

  2. Add eggplant and spices and stir. Cover and cook over medium, stirring occasionally for about 15-20 minutes until eggplant is very soft.

  3. Add zucchini, peppers, tomatoes (breaking tomatoes into smaller pieces with spoon). Cover and simmer abotu 10 more minutes until zucchini and peppers are tender.
