A light, summery dish that is packed with vitamins and fresh vegetable flavors.

Recipe Ingredients for Ratatoille

1 onion
4 tsp olive oil
3 cloves garlic
1 eggplant
2 zucchini
1/2 cup vegetable broth
15 oz diced tomatoes
1 green bell pepper
2 tsp oregano
1 tsp rosemary
1/2 tsp fennel

Recipe Directions for Ratatoille

  1. Heat olive oil in a non-stick skillet

  2. Saute onion until soft, and add garlic and saute 2-3 more minutes. Add zucchini and saute 5 more minutes. Transfer to a large bowl.

  3. Add broth to skillet add add eggplant slices. Cover and cook, stirring occassionally, until eggplant is tender, about 10 minutes. Add eggplant to the bowl.

  4. Add tomatoes and spices to the skillet and simmer 5 minutes.

  5. Stir in green pepper and simmer 7 more minutes.

  6. Return all vegetables from the bowl to the skillet. Sprinkle with salt and pepper as desired.

  7. Cook, uncovered, for about 3 more minutes.

  8. Serve warm or at room temperature.
