Recipe Ingredients for Ratatoille with Chickpeas

1 tbsp vegetable oil
1 small onion, chopped
2 cloves garlic
6 cups eggplant, cubed
2 tsp dried basil
1 tsp dried oregano
1/2 tsp salt
1/2 tsp pepper
1 cup red pepper
1 yellow pepper
2 zucchini
3/10 cup tomato paste
1 1/2 cup chickpeas
28 oz. canned tomatoes
1/4 cup chopped parsley

Recipe Directions for Ratatoille with Chickpeas

  1. In a large skillet:

  2. heat oil over medium heat; fry

  3. onion, garlic, eggplant, basil, oregano, salt, pepper, stir occasionally until onion is softened (about 10 minutes).

  4. Scrape into slow cooker and add remaining ingredients. Cover and cook on low for 4 hours or until veggies are tender. Add parsley.
