Raspberry and white chocolate muffins

Recipe Ingredients for Raspberry and white chocolate muffins

150 g self-raising flour
100 g polenta
2 tsp baking powder
80 g caster sugar
250 ml milk
1 large egg
90 ml vegetable oil
150 g raspberries
150 g white chocolate chips

Recipe Directions for Raspberry and white chocolate muffins

  1. Preheat oven to 180C (160C if using a fan oven) or gas Mark 4.

  2. Place the muffin cases into a muffin tray.

  3. Place all the ingredients apart from the raspberries and chocolate into a bowl and mix the batter until it is all combined but still lumpy - this helps keep it light and fluffy.

  4. Gently fold in the raspberries and chocolate.

  5. Bake for 20-25 minutes until nicely risen and golden on top.

  6. Allow to cook slightly and enjoy
