Cheesecake with melted chocolate stirred in... a melted chocolate glaze with raspberry jam melted and frosted on sides. Caked with sliced almonds & topped with fresh berries!

Recipe Ingredients for Raspberry White Chocolate Cheesecake

1 1/4 c graham cracker crumbs
1/4 c Ground almonds
2 T Sugar
1/8 tsp almond extract
3 T butter
6 oz white chocolate
2 lbs cream cheese
5 eggs
3/4 c sugar
3 T flour
1 tsp vanilla
1/4 tsp almond extract
7 T heavy cream
8 oz white chocolate

Recipe Directions for Raspberry White Chocolate Cheesecake

  1. Combine first 5 ingredients and press into spring form pan. Bake at 350 for 10 min & cool.

  2. Set oven to 325. Foil on bottom of pan - place in a water bath.

  3. Whip up room temperature cheese & add eggs, one at a time.

  4. Add sugar, flour and flavors. Melt chocolate and add. Cream together well. Pour into pan.

  5. Bake for 50 plus min. Open oven door and let it set a while - loosen with knife around the edge.

  6. Cool completely in fridge. scald cream, melt in chocolate and use to frost top of cake. Refrigerate to set glaze. Put jam on sides and pat the sliced nuts into the jam.
