This isn't healthy but it's one of the most successful and delicious recipes I have come across. I always bring this to parties and people go bonkers.

Recipe Ingredients for Raspberry Walnut Bars

3/4 cup butter or margarine (1 1/2 sticks), softened
1 cup sugar
1/2 teaspoon freshly grated lemon peel
1/2 teaspoon ground cinnamon
2 large egg yolks
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1 cup walnuts, chopped
1/2 cup seedless raspberry jam

Recipe Directions for Raspberry Walnut Bars

  1. preheat oven to 350 degrees. evenly grease 9-inch square baking pan

  2. in large bowl, with mixer at medium speed, beat butter, sugar, lemon peel and cinnamon until light and fluffy, occasionally scraping bowl with rubber spatula. reduce speed to low; beat in egg yolks and vanilla until well combined, frequently scraping bowl. add flour and salt and beat just until blended, occasionally scraping bowl. stir in walnuts.

  3. with lightly floured hand, pat half of dough evenly onto bottom of prepared pan. spread raspberry jam over dough, leaving 1/4-inch border all around. with lightly floured hands, pinch off pieces of remaining dough and drop randomly on top of jam (it's okay if dough pieces touch); do not pat.

  4. bake until crust is golden, 45 to 50 minutes. cool completely in pan on wire rack.

  5. when cool, cut into 4 strips, then cut each strip crosswise into 6 pieces.
