Recipe Ingredients for Raspberry Upside Down Treat

2 cups raspberries (can be frozen)
1 tbsp sugar
3 eggs, separated
1/2 cup sugar
1/4 tsp. salt
1/2 cup butter, melted
3/4 cup skim milk
1 tbsp. lemon juice
1 1/2 cups flour
2 1/2 tsp. baking powder

Recipe Directions for Raspberry Upside Down Treat

  1. Preheat oven to 425 F.

  2. Put raspberries in bottom of loaf pan. Sprinkle with tablespoon of sugar

  3. Beat egg yolks. Beat in 1/2 cup sugar then salt then melted butter.

  4. Sift together flour and baking powder.

  5. Add milk and lemon juice alternately with flour, folding after each addition.

  6. Beat egg whites and fold into cake batter.

  7. Pour cake batter over raspberries and bake for about 45 minutes, or until golden brown and cooked through (a toothpick comes out clean).

  8. Let cool before turning out of pan.
