Raspberry Turkey Recipe

(adapted from www.raspberryrecipes.net/raspberry-chicken) I will try serving this with Baked Kale.

Recipe Ingredients for Raspberry Turkey

1 pound boneless skinless turkey breast
2 tablespoons of olive oil
2 tablespoons of shallots, finely chopped
1/4 cup of raspberry flavored red wine vinegar
1/4 cup of chicken stock, light and low sodium
1/4 cup of lowfat yogurt
1 tablespoon of wild blueberrie black currant juice
10 fresh raspberries

Recipe Directions for Raspberry Turkey

  1. Rinse the turkey well and pat dry.

  2. Cut each turkey breast in half along the breastbone line.

  3. Flatten each breast half with the flat end of a meat pounder until thin.

  4. In a large skillet, heat the olive oil.

  5. Add the turkey breasts and cook over medium heat until they are lightly colored (approximately 3 minutes per side). Remove from the skillet and set aside.

  6. Add the chopped shallots to the skillet and cook over low heat until they are translucent (approximately 5 minutes).

  7. Add the vinegar, raise the heat, and cook, stirring occasionally, until it has reduced to a syrupy spoonful.

  8. Whisk in the chicken broth, yogurt, and black currant juice, and simmer for 1 minute.

  9. Return the breasts to the skillet and simmer them gently in the sauce until they are just done (approximately 5 minutes).

  10. Using a slotted spoon, remove the chicken breasts and arrange them on a heated serving platter.

  11. Simmer the sauce gently until it has reduced and thickened slightly (approximately 3 minutes).

  12. Add the fresh raspberries and cook 1 minute.

  13. Pour the sauce over the breasts.

  14. Serve immediately.
