Modified shortcake recipe for wild grown raspberries from our yard.

Recipe Ingredients for Raspberry Shortcake

1 lb raspberries, fresh/frozen
1/4 cup sugar - DIVIDED
3 tablespoons sugar
12 oz fat-free greek style yogurt ? DIVIDED
1 cup all purpose flour (+ 2 tablespoons)
2 tablespoons all purpose flour
1/4 cup whole wheat flour (+ 2 tablespoons)
2 tablespoons whole wheat flour
2 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons butter, chilled & cut into 1/4? pieces
1 teaspoon vanilla extract

Recipe Directions for Raspberry Shortcake

  1. Position oven rack in middle. Preheat oven to 425*F.

  2. Toss berries with 3 tablespoons sugar in medium bowl, let stand 30 minutes

  3. Whisk 6oz yogurt and 1 tablespoon sugar in a small bowl, cover and chill.

  4. Whisk flours, baking powder, baking soda, salt, & 3 tablespoons sugar in large bowl. Rub butter into flours with a pastry cutter or fingertips to form a coarse meal.Add vanilla extract and last 6oz of yogurt. Mix well with fork (dough will be very shaggy).

  5. Press dough together with fingers until well combined. Pat out to a generous ? thick on a lightly floured surface.

  6. Cut out 6 biscuits with a 3? biscuit cutter, patting out scraps as needed.

  7. Put rounds on baking sheet and bake until golden brown, about 15-20 minutes. Let cool slightly then split warm rounds in half with a fork.

  8. For each serving, place bottom half on plate, add about cup berries, top with other biscuit half, and dab a generous 2 tablespoons of yogurt mix on top.
