Recipe Ingredients for Raspberry Ricotta Cheesecake

15 ounces part-skim ricotta cheese
1/2 cup fat free sour cream
4 ounces reduced fat cream cheese
3 large eggs
3/4 cup Splenda
1/4 cup flour
1 teaspoon vanilla extract
1 teaspoon orange zest, finely grated
1/4 teaspoon salt
1/4 cup raspberry jam, no sugar added
1/2 ounce orange liqueur
12 ounces raspberries

Recipe Directions for Raspberry Ricotta Cheesecake

  1. Blend ricotta in food processor until smooth.

  2. Add sour cream, cream chees, eggs, Splenda, flour, vanilla, orange zest and salt.

  3. Bake at 325 degrees for 50 to 55 minutes.

  4. Cook on wire rack, then in refrigerator for 3 hours or overnight.

  5. Heat raspberry jam and liqueur until combined. Brush onto cooled cheesecake.

  6. Add fresh raspberries.
