Change the tomatos to 1 can crushed tomatoes in puree (14 1/2 oz.) Can use fresh beet and cook them first or use a can of beets (15 oz.) I puree the final mixture.

Recipe Ingredients for Raspberry-Red Beet and Tomato Soup

1 onion, finely chopped
1 red pepper, finely chopped
2 t olive oil
1 t ground ginger
1/4 t honey
1 cup chicken broth
10 tomatos
10 beets
1 salt and pepper

Recipe Directions for Raspberry-Red Beet and Tomato Soup

Stir the onion, pepper, and oil together in a large pot over low heat and cook until softened, about 3 minutes. Stir in salt, ginger, honey, broth, and tomatoes. Drain the beet liquid into the pot, cop the beets, and add them,too. Bring to a boil and lower the heat to a gentle simmer; cook for 10 minutes. Add salt and pepper to tasate; leave soup chunky or puree.
