Particularly delicious! Don't use a liquid yoghurt, rather a thick pot-set one. Don't stir it in excessively, either! A dash of pineapple juice works wonders too~

Recipe Ingredients for Raspberry muffins

1 1/2 cup Self Raising flour
3/4 cup caster sugar
1/4 cup brown sugar
1 egg
1 tspn vanilla extract
1 tspn lemon zest
3 tbspn lemon juice
1/2 cup milk
1 cup yoghurt
1 1/2 cup raspberries

Recipe Directions for Raspberry muffins

  1. 1. Preheat to 180* Celsius, line some muffin tins

  2. 2. Mix all the dry ingredients together in one bowl.

  3. 3. Place milk, lemon zest and lemon juice in a separate bowl, and leave for a few minutes till it gets a kind of curdled look. Stir in the yoghurt and egg till a very inconsistent and lumpy mix is made, and add the vanilla extract.

  4. 4. Combine the two bowls, and stir the contents till it forms a lumpy batter.

  5. 5. Lastly, roughly stir in the raspberries, and spoon into the muffin tray. Bake for 20 mins or until golden brown
