Wheat For Man recipe, with raspberries added. Sub nonfat plain yogurt for the oil and EggBeaters for even lower fat. Sub 1/4 cup white bean flour for more fiber and to improve the protein quality.

Recipe Ingredients for Raspberry Muffins

2 cups whole wheat flour
1/2 tsp salt
3 tsp baking powder
1 cup skim milk
2 tbsp. canola oil
3 tbsp. brown sugar
2 eggs
1.67 cups frozen raspberries

Recipe Directions for Raspberry Muffins

  1. Mix dry ingredients.

  2. Toss raspberries with 1/4 cup of the dry ingredients.

  3. Add everything but berries, mix.

  4. Stir in berries last.

  5. Fill muffin tin 2/3 to 3/4 full, makes 12.

  6. Bake at 350 degrees about 24 minutes.
