Rustic fruit muffin, works with any berry.

Recipe Ingredients for Raspberry muffins

2 1/2 cup flour
1/2 cup whole wheat flour
2 tsp baking powder
1/4 tsp salt
16 oz low-fat yogurt
1/2 cup milk
1/4 cup oil
2 eggs
1 tsp vanilla
1 tsp almond extract
1 cup raspberries
1/4 cup almonds

Recipe Directions for Raspberry muffins

  1. Heat oven to 400.

  2. Prepare muffin pan(s) for 16 good size muffins.

  3. In large bowl, mix dry ingredients. In separate bowl, beat eggs and add the rest of the liquids.

  4. Mix liquids into dry ingredients. Blend till moistened. Fold in berries.

  5. Fill muffin cups, top with sliced almonds and bake 20-25 minutes.

  6. Cool in pan 5 minutes, then remove to rack to cool.
