Recipe Ingredients for Raspberry Muffins

2 cups whole wheat flour
1 cup Splenda
3 tsp baking powder
1/3 cup egg whites
1 cup fat free half and half
1/2 cup unsweetened applesauce
3 tsp lemon extract
1 cup frozen raspberries

Recipe Directions for Raspberry Muffins

Preheat oven to 400. In a large bowl combine flour, splenda, baking powder and dash of salt. In a medium bowl, combine eggs, 1/2 & 1/2, applesauce & lemon extract. Stir in with dry mixture until blended. Fold in rasperries. Add paper liners into muffin cups & fill cups 2/3 full. Bake for 20 minutes or until toothpick comes out clean.
