WFM recipe, with all substitutions made to lower fat and sugar, and improve protein content.

Recipe Ingredients for Raspberry Muffins - Almost fat free

1 3/4 cups whole wheat flour
1/4 cup navy bean flour
1/2 tsp salt
3 tsp baking powder
1 cup skim milk
2 tbsp. fat free plain yogurt
1 tbsp. brown sugar
2 tbsp. Splenda
1/2 cup Eggbeaters
1.67 cups frozen raspberries

Recipe Directions for Raspberry Muffins - Almost fat free

  1. Mix dry ingredients.

  2. Toss raspberries with 1/4 cup of the dry ingredients.

  3. Add everything but berries, mix.

  4. Stir in berries last.

  5. Fill muffin tin 2/3 to 3/4 full, makes 12.

  6. Bake at 350 degrees about 24 minutes.
