Recipe Ingredients for Raspberry Meringue Fool

2 egg whites
1/4 cup sugar
1.33 cups raspberries
2 tbsp. sugar
239 g whipping cream (1 cup liquid)
2 tbsp. sugar

Recipe Directions for Raspberry Meringue Fool

  1. Preheat oven to 250 F.

  2. Beat egg whites until soft peaks form. Slowly add 1/4 cup sugar, continuing to beat. Beat until stiff peaks form.

  3. Spoon egg white mixture onto a baking sheet covered in wax paper to make 12 meringues.

  4. Bake for 90 minutes. Let cool.

  5. Use a fork to crush raspberries along with 2 tbsp. sugar.

  6. When ready to serve, whip cream with 2 tbsp. sugar until stiff peaks form.

  7. Fold raspberry mixture into cream.

  8. Partially crush the meringues and fold them into the mixture.

  9. Spoon mixture into bowls. Serve immediately.
