Ginger nuts/cookies base with gelatine & cream cheese middle topped with fresh raspberries

Recipe Ingredients for Raspberry & Ginger Cheesecake (no bake)

300 g Ginger Snap Cookies
100 g butter
3 teaspoons gelatine
60 ml water
400 g cream cheese
1 teaspoon vanilla extract
220 g sugar
250 ml double cream
400 g raspberries

Recipe Directions for Raspberry & Ginger Cheesecake (no bake)

  1. Blitz biscuits till fine crumb is achieved. Line bottom of rectangular pan with paper.Melt butter, combine with cookie crumbs and press into bottom of pan.

  2. Mix gelatine powder with water and combine till mixed.

  3. Mix cream cheese with vanilla, sugar till combined. Add the double cream till mixed. Add in the gelatine. mix again. Pour over cookie base and refrigerate 2 hours till set. Top with raspberries and serve.
