1 pound frozen raspberries
1/4 tsp lemon zest
4 tblsp splenda

Recipe Directions for Raspberry Coulis

  1. puree and strain fruit through the chinois mousseline

  2. sweeten to taste- different fruits will need more or less sugar

  3. add lemon juice and / or zest if needed to brighten flavor

  4. heat the coulis and thicken by reducing or adding a small amount of slurry
