Raspberry Chicken Recipe

Low-glycemic when the right raspberry spread is used.

Recipe Ingredients for Raspberry Chicken

1 lb boneless skinless chicken breast
1 tsp thyme
1 tbsp extra virgin olive oil
1 medium red onion, diced
8 oz raspberry fruit spread (fruit only, no sugar added)
1/3 cup balsamic vinegar

Recipe Directions for Raspberry Chicken

  1. Season chicken with thyme on both sides, set aside.

  2. Heat oil in skillet over medium heat. Cook onion until soft.

  3. Add chicken and cook until well cooked, approximately 8 minutes on each side. Then remove chicken and set aside.

  4. Add low GI fruit spread and balsamic vinegar to oil in skillet. Cook for several minutes until ingredients are well combined and fruit spread is melted. Add chicken back into skillet and serve with sauce poured over top.
