Blueberries are rich in phytonutrients and have the highest antioxidant capacity of all fresh fruit. Both blueberries and raspberries are rich in vitamin C. This dessert is also a good source of protein and calcium (from the tofu).

Recipe Ingredients for Raspberry and Blueberry Mousse

4 oz blueberries
8 oz raspberries
300 g silken tofu
2 tbsp clear honey

Recipe Directions for Raspberry and Blueberry Mousse

  1. Reserve a few raspberries and blueberries for decoration. Place the remaining fruit in a blender or food processor with the tofu and honey. Blend until smooth. Divide into 4 individual dishes.

  2. Decorate with the reserved fruit. Chill in the fridge and serve.
