Recipe Ingredients for Raspberry Banana Bran Muffins

3/4 cup of spelt flour
1 pinch of salt
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1 teaspoon of cinnamon
1/2 cup of bran flakes
1 tablespoon flaxseed
3 large bananas
3/4 cup of raspberries

Recipe Directions for Raspberry Banana Bran Muffins

  1. Preheat the oven to 350 degrees.

  2. Grease a muffin tin that holds 12 muffins with either a bit of butter or safflower oil. The oil makes it vegan, and doesn't leave a flavor like olive oil does.

  3. Combine the flaxseed mix with the bananas and mash together until you get a thick, mushy consistency.

  4. In a separate bowl, combine the dry ingredients and whisk together.

  5. Add the dry ingredients to the wet ingredients in several additions, making sure to mix well between additions, but not over-mixing.

  6. Fold in the raspberries gently.

  7. Bake in the oven for 20 minutes or until a toothpick comes out clean from the center of one of them muffins.
