My Mom's favorite cake for her Birthday.

Recipe Ingredients for Raspberry Almond Layer Cake

3 large Egg, Whole
18 1/4 oz Moist Supreme Cake Mix
0.33 cup Vegetable Oil, Canola
12 1/4 oz Red Raspberry Preserves
1 cup (8 fl oz) Water
4 tsp Almond Extract
3 egg whites
1 cup sugar
1 1/2 cups unsalted butter
1/4 cup water
2 cups fresh raspberries
3/4 cup sliced almonds

Recipe Directions for Raspberry Almond Layer Cake

  1. Make cake into 2 layers according to package directions adding in 2 tsp almond extract. Let cool.

  2. In a large bowl beat the sugar, softened butter, milk and 2 tsp vanilla extract until icing is made.

  3. On first cake layer spread the entire jar of raspberry jam and top with second layer. Ice cake top and sides.

  4. Sprinkle with almond slices if desired.
