Recipe Ingredients for raspberry and almond cake

100 g flora original
100 g sugar
3 eggs
3 tbsp all purpose flour
140 g ground almonds
2 tbsp lemon juice
1 tsp vanilla extract
1 cup raspberries
1 tsp lemon zest

Recipe Directions for raspberry and almond cake

  1. heat oven to 180 degrees

  2. line 20cm tin with baking paper

  3. beat spread and sugar together until thick and pale. add eggs one at a time then add flour and mix well. add the almonds, lemon zest and juice, then vanilla. stir gently until well combined.

  4. add raspberries and gently mix.

  5. pour mixture into tin. bake for 25mins, or until cake it just firm and spongy to touch and a skewer comes out clean. keep and eye out during cooking, if necessary cover cake with foil to stop the top browning too much. cool in the tray for a few minutes before easing out and cooling on a rack. serve with a sprinkle of icing sugar and fresh berries
