Recipe Ingredients for Rasam from scratch

200 g Toor Dal
10 cup (8 fl oz) Water
4 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
796 grams Tomatoes Whole Peeled
1440 tbsp Coriander Seed
270 tbsp Cumin Seed
90 tbsp Pepper, Black
180 tbsp Chili Powder
135 tsp Mustard Seed, Yellow
45 tsp Fenugreek Seed
90 tsp Turmeric, Ground
45 serving Asafoetida 1 tsp
180 serving Curry Leaf
5 cup Coriander Leaves
1 tsp Salt, Table
1 tsp Turmeric, Ground
30 g Tamarind Concentrate
1 tsp Sugars, Granulated
30 grams Butter Ghee
1 tsp Mustard Seed, Yellow
1 tsp Cumin Seed
4 pepper Peppers, Hot Chile, Sun-dried

Recipe Directions for Rasam from scratch

  1. For rasam powder

  2. Roast 1/2 cup of coriander seeds, 1 1/2 tablespoons of cumin seeds, 1 tablespoon of mustard seeds, 1/4 teaspoon of fenugreek seeds, in a dry frying pan careful not to burn.

  3. Add 1 tablespoon chili powder, 1/2 teaspoon turmeric powder, 1/4 teaspoon asafoetida powder, and a teaspoon of curry leaves and grind into a fine powder. Set aside

  4. Prepare and Boil toor dal until soft and mushy, drain and set aside.

  5. Add 10 cups of water, 4 chopped fresh tomatoes, a large can of chopped tomatoes, the rasam powder, 1/2 cup of coriander leaves (or cilantro), a teaspoon of salt, and a teaspoon of turmeric to a stock pot and bring to a boil. Boil for 5 minutes.

  6. Add mashed toor dal, 2 teaspoons of tamarind paste, and a teaspoon of sugar. Simmer for 20 minutes or until tomatoes are soft.

  7. In a small frying pan, heat 2 tablespoons of ghee, and add a teaspoon of mustard seeds, a teaspoon of cumin seeds, and 4 finely chopped dries chillies. Fry until mustard seeds start to pop. Add 6 curry leaves and then add it all to the stock pot carefully.
