Recipe Ingredients for Rapini Soup with Sausage, Pasta and Beans

300 g rapini
375 ml Orecchiette
1 tbsp olive oil
1 large onion
2 cloves garlic, minced
8 cups chicken broth
26 g hot Italian sausage, cooked and sliced
540 ml white kidney beans, rinsed and drained
3 oz romano cheese
45 ml sun-dried tomatos, finely chopped (optional)

Recipe Directions for Rapini Soup with Sausage, Pasta and Beans

  1. Bring medium saucepan of water to the boil

  2. while the water is coming to a boil trim about 1 inch (2.5 cm) of the stems of the rapini. Discard

  3. Cut the stem end into 2 inch pieces.

  4. Cut the remaining rapini bunch in half.

  5. When the water has come tot a boil, blanch the rapini in two batches for about 1 and a half minutes

  6. Transfer to a bowl of ice water. Drain well and set aside.

  7. In the water that you blanched the rapini, add a teaspoon of salt .

  8. Cook the pasta until al dente. Drain and set aside.

  9. In a 6-8 quart stock pot, heat the olive oil over medium heat.

  10. Add the onion and cook until soft

  11. Add the garlic and cook a further minute.

  12. Add the chicken broth and sausage and bring to a simmer.

  13. Add the blanched rapini and white kidney beats.

  14. Bring back to a simmer.

  15. season with salt and pepper if needed.

  16. Ladle into bows and spinkle some romano cheese on top.
