Best I've ever made! This dish is very low in sodium. I couldn't eat a full serving, but my husband did.

Recipe Ingredients for Raosted Garlic Potatoes

2 pounds red potatoes
2 teaspoons olive oil
1 1/2 teaspoon black pepper
1 1/2 teaspoon red pepper flakes
2 tablespoons oregano
2 tablespoon parsley
4 cloves garlic

Recipe Directions for Raosted Garlic Potatoes

  1. Pre-heat oven to 425. Cut cleaned potatoes into 1 inch pieces. In small bowl, combine the rest of ingredients. Toss the mixture and potatoes together in mixing bowl making sure all pieces are coated very lightly. You may need a little more less oil. Using a slotted spoon so as not to add excess oil, move the potatoes into a 9x13 pan. Make sure it is a single layer. Cover with foil. Bake for 20 minutes. Remove foil. Bake for 15 minutes. Remove from oven. Flip potatoes so that the browned side is showing. Bake another 10-15 minutes.

  2. Use any variation for spices. I like the crispy garlic, but if you don't, add it at when you flip the potatoes.
