Recipe Ingredients for Rangoon Chicken Wraps

4 lbs chicken
1 green pepper
3 carrots
1 zucchini
1/4 cup coconut milk
1/4 cup chicken broth
2 tbsp peach jam
2 tbsp ginger
2 tbsp soy sauce

Recipe Directions for Rangoon Chicken Wraps

  1. julienne the carrots, place on the bottom. Put the chicken breast side down on the carrots, top with sliced green pepper and zucchini. Use fruit chutney NOT peach jam. Put chutney, soy sauce, 1/2 cup lite coconut milk and 1/2 cup fat free chicken broth into a bowl, stir, and pour over top of the chicken and vegies. Cook on low for 5 hours.

  2. Place in a whole wheat torilla, with a little sauce. Put something crunchy in like snow peas or fresh spinach. Or eat over kasha or rice
