Recipe Ingredients for Ranger Cookies

1/2 cup Butter
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 tsp Baking Powder
1/4 tsp baking soda
1 egg
1 tsp vanilla
1 1/4 cups White Whole Wheat Flour
1 cup quaker oats
1 cup coconut
1 cup Value Raisins

Recipe Directions for Ranger Cookies

  1. Preheat oven to 375. Mix butter w/ electric mixer for 30 seconds. Add sugars, baking powder, baking soda. Beat until combined, scraping sides of bowl occasionally. Beat in egg and vanilla until combined. Beat in as much of the flour as possible with the mixer. Stir in any remaining flour. Stir in rolled oats, coconut, and raisins.

  2. Drop dough by rounded teaspons 2 inches apart onto an ungreased cookie sheet. Bake for 8 to 10 minutes or until edges are light brown and centers are set. Cook on cookie sheet 1 minute, transfer to wire rack and let cool.
