Ranger cookies from Company's Coming. Modified to replace 1/2 of butter with apple sauce and subs some sugar with honey. Reduced calories to approximately 50. Makes 8 1/2 dozen.

Recipe Ingredients for Ranger Cookies - modified

1/2 cup butter
1/2 cup unsweetened apple sauce
1/2 cup granulated sugar
1/2 cup brown sugar
3/4 cup honey
2 eggs
2 tsp vanilla
2 cups whole wheat flour
1 1/2 tsp baking soda
1/2 tsp baking powder
1 1/2 tsp salt
2 cups raisin bran
1/4 cup wheat bran
2 cups rolled oats
1 cup coconut
1 cup raisins

Recipe Directions for Ranger Cookies - modified

  1. Cream butter and sugars. Beat in eggs, one at a time. Add vanilla.

  2. Stir flour, baking soda, baking powder, and salt together and add. Mix.

  3. Add cereal, oats, coconut and raisins. Mix well. Roll into 1 inch balls or push from spoon. Arrange on greased baking sheet. Bake at 375 for 6 to 8 minutes until golden.
