Recipe Ingredients for Random Red Pasta Sauce #1

16 oz Italian Mild
2 clove Garlic
1 small Squash, Summer, Zucchini, Includes Skin
1/2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
2 cup chopped raw Sliced Baby Bella Mushrooms Packaged
1 serving Extra Virgin Olive Oil
24 oz Tomato

Recipe Directions for Random Red Pasta Sauce #1

Slice all veggies (1 zucchini, 1/2 or 1 whole red pepper and about 2 cups sliced portabello or cremini mushrooms) before hand the way you like them. Crush garlic (or thinly slice), set all veggies aside. Cook 1 lb. mild Italian chicken sausage in hot skillet, WITHOUT oil, until done. Remove from heat and put sausage aside. Add 1 Tbsp olive oil to a large hot skillet, throw mushrooms in and cook until done to your liking, throw in garlic, stir, add the sliced zucchini and red pepper, saute for about 2 min, then add sausage back in to the skillet. Pour entire bottle of Tomato & Basil sauce into skillet and bring to simmer. Makes ~5 Cups (when use small zucchini and 1/2 a medium red pepper). Nutrition based on 1 C. serving. This random recipe I threw together tonight turned out pretty dang good.
