Used veggies and beef I found in the fridge that needed to be used. Skipped the rice and used chick peas instead. Could substitute tofu in place of meat or just use more beans.

Recipe Ingredients for Random low-carb beef stir fry with chick peas

1 cup, sliced Squash, Summer, Crookneck And Straightneck
1 cup slices Squash, Summer, Zucchini, Includes Skin
120 grams Organic Cremini Mushrooms Packaged
1 cup Baby Bok Choy
0.5 cup, strips Peppers, Sweet, Red
0.25 medium Orange Hothouse Bell Pepper
15 oz Garbanzo Beans Low Sodium
9.6 oz Beef, Top Sirloin
2 serving Hoisin Sauce Central Market HEB Organics
1.5 tbsp Olive Oil

Recipe Directions for Random low-carb beef stir fry with chick peas

With wok on med-high heat. Use 1/2 the oil to stir fry the beef, throw in the chick peas about 1/2 way through. Remove from wok and set aside. Pour in remaining oil in wok. Throw in diced veggies (all of them), pour 1/2 the sauce you want (~1 TBSP) while cooking. Once yellow squash looks done, add beans and beef back to wok, add ~1 more TBSP sauce and combine thoroughly. Serves ~4 small servings, or 2 large. Nutrition based on 4 servings.
