Recipe Ingredients for Ranch Mashed Potatoes

2 medium potatoes, peeled and cut into chunks
1 c cauliflower, bite-sized florets
1/4 c. fat-free ranch salad dressing

Recipe Directions for Ranch Mashed Potatoes

  1. Place potatoes and cauliflower in a large saucepan. (For best results, cut potatoes and cauliflower into equal-sized pieces for even cooking.)

  2. Add enough water to completelly cover vegetables. Bring to a boil on medium-high heat.

  3. Reduce heat to medium-low; simmer 20 minutes or until vegetables are tender.

  4. Drain, leaving vegetable mixture in pan.

  5. Add dressing; mash until light and fluffy.
