A twist on Asian noodles by adding cauliflower

Recipe Ingredients for Ramen Noodles with Broccoli & Cauliflower

6 oz ramen noodles
8 oz broccoli
8 oz cauliflower
6 oz onion
1 tsp garlic
1 tsp olive oil
1 tsp fresh ginger
1 tsp peanut butter
1/4 cup low sodium chicken broth
1/2 cup water
1 tsp corn starch
1/2 serving Publix Less Sodium Soy Sauce

Recipe Directions for Ramen Noodles with Broccoli & Cauliflower

  1. boil noodles for 1 minute drain and set aside.

  2. chop broccoli and cauliflower and set aside

  3. chop onion into slices

  4. Put chicken broth, oil, garlic and onion in the sauce pan and heat on high for 2 minutes.

  5. Add cauliflower and cover and heat 2 minutes

  6. Add broccoli, peanut butter, ginger and soy sauce and cook until tender adding water as needed.

  7. Drop noodles on top when broccoli is tender.

  8. Mix cornstarch into 1 Tbs water and add to the mixture immediately prior to serving to thicken sauce.

  9. Stir until the noodles and vegetables are thoroughly mixed.
