Red Bean Curry-Not quite like the original but its a great short-cut when you're feeling like something different.

Recipe Ingredients for Rajma Masala

14 oz Red Kidney Beans
1 tbsp Canola Oil
2 cloves garlic
1 tbsp ginger root
2 tsp italian seasoning
1 tsp curry powder
1 medium onion
1 tsp salt
1 tbsp ketchup
80 grams sun-dried tomatoes

Recipe Directions for Rajma Masala

  1. Brown garlic, ginger and onion in oil.

  2. Add italian seasoning and curry powder.

  3. Add sun-dried tomatoes and 1/4 cup of water.

  4. Add beans with stock.

  5. Add 1/4 cup water and ketchup.

  6. Simmer for about 15 minutes.
