This bread is especially good for toast, sandwiches or French toast.

Recipe Ingredients for Raisin-Rye Bread

1 1/2 c. warm water
1 packages dry yeast
1/8 cup dark molasses
1/8 c. honey
1 tsp. salt
1 t. vegetable oil or soft margarine
1 1/2 c. rye flour
1 1/2 cups whole wheat flour
3 c. raisins (3/4 pounds)

Recipe Directions for Raisin-Rye Bread

  1. Mix water, yeast, molasses, and honey in large bowl and let stand 5 minutes. Add all other ingredients, except raisins, in order given. Stir with a wooden spoon until mixture becomes too thick for a spoon. Use your hands to mix in the remaining flour. Add extra flour if necessary to make a stiff dough that comes away from the sides of the bowl. Turn onto a floured board and knead until smooth (about 5 minutes). Work in more flour if needed (dough should not be sticky).

  2. Return dough to bowl and cover with plastic or damp cloth. Let rise 1 hour, or until doubled in bulk. Punch down and turn onto a floured board. Knead working in the raisins. Form into 1 loaf, and place on greased loaf pans or on a greased baking dish. Cover with plastic or damp cloth, and let rise until doubled in bulk. Bake 15 minutes at 400 degress F. , and then 35 minutes at 350 degrees F. Cool loaf on rack.
