They're called cookies, but if you make them as big as I did, they're more like mini-pies.

Recipe Ingredients for Raisin-Filled Cookies

1 cup butter
2 cups packed brown sugar
3 eggs
3 1/2 cups all-purpose flour
1/2 cup walnuts, finely ground
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

FILLING:
1 cup sugar
2 tablespoons cornstarch
1 cup water
1/4 cup raisins
1/2 cup prunes, chopped
1/4 cup dates, chopped
1/2 cup chopped walnuts
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1/4 cup lemon juice

Recipe Directions for Raisin-Filled Cookies

  1. Combine dough ingredients.

  2. Refrigerate for at least 1 hour.

  3. Boil the water, reduce to a simmer, and add the fruit.

  4. Add nuts, cornstarch, lemon juice, and spices to fruit.

  5. Stir and reduce until thickened. Allow to cool.

  6. Refrigerate filling for at least 1 hour.

  7. Roll out dough and cut using a round cookie cutter.

  8. Lay a layer of circles on cookie sheet, add about 1 tablespoon of filling to each circle, then top with another circle. Repeat for all cookies.

  9. Press edges together with a fork.

  10. Bake for about 12 minutes, or until cookies are golden brown.

  11. Cool for 5 minutes and serve.
