taken from The Everyday Diabetes Cookbook by Stella Bowling. I doubled the raisins and substituted peanut butter for the margarine

Recipe Ingredients for Raisin Cookies

2 c whole wheat flour
1 tsp baking powder
1 tsp cinnamon
1 tsp allspice
1/2 c peanut butter
1/3 c sugar
1 1/2 c raisins
1 egg
6 tbsp water

Recipe Directions for Raisin Cookies

  1. Preheat oven to 400 F Place teh flour, baking powder & cinnamon in a bowl. Cut in the margarine until the mixture looks like breadcrumbs

  2. Stir in the sugar and raisins.

  3. Combine the egg & water in a small bowl & beat together with a fork

  4. Pour into the currant micture in the bowl.

  5. Mix well. The mixture will be sticky

  6. Drop cookie dough in spoonfuls 2 inches apart on the baking sheet

  7. Bake 10 - 15 min or until golden brown. Cool on a wire rack
