Recipe Ingredients for Raisin Cinnamon Bread

1/2 cup Wheatena
1 1/2 cups skim milk
2 eggs
1/4 cup vegetable oil
1 3/4 cups all purpose flour
1 tbsp baking powder
2 tsp cinnamon
1/4 cup dark brown sugar
1 cup raisins

Recipe Directions for Raisin Cinnamon Bread

  1. In a large bowl combine Wheatena and milk; let stand 30 minutes. Meanwhile, preheat oven to 350 degrees. Spray the bottom only of an 8 1/2 x 4 1/2 x 2 1/2 loaf pan with Pam. Stir eggs and oil into Wheatena mixture. Sift together flour, baking powder and cinnamon. Stir in brown sugar. Stir flour mixture into Wheatena mixture until just moistened. Stir in raisins. Pour batter into prepared loaf pan. Bake 50 minutes or until toothpick inserted into center comes out clean. Cool in pan on wire rack 5 minutes. Remove from pan and allow to cool completely on wire rack.

  2. (I used mostly applesauce for the oil. Maybe had 1 Tbsp of oil mixed with the applesauce in my initial experiment.)
