Recipe Ingredients for Raisin-Cashew Chicken

120 grams boneless, skinless chicken breast
1/2 tbsp. fresh lemon juice
1/4 medium red bell pepper
3 tbsp. fresh shredded carrots
1 tbsp cashews, chopped
1 1/2 tbsp. craisins
1/3 tbsp. olive oil
2 tbsp uncooked brown rice, cooked

Recipe Directions for Raisin-Cashew Chicken

  1. Rinse and pat dry chicken; cut into bite-size pieces.

  2. Rinse and chop bell pepper. Coarsely chop cahsews; set aside.

  3. Coat a non-stick skillet with cooking spray and heat over medium heat: add chicken and sauté until no longer pink inside, about 5-6 minutes.

  4. Remove from pan and reserve. Coat skillet again with cooking spray; add red pepper and sauté until just tender, about 3-4 minutes. Add chicken, cooked rice, shredded carrots, cashews, lemon juice, olive oil and raisins and heat through, about 1-2 minutes, stirring to mix well. Serve.
