healthy treat--can be made practically fat free by substituting 1/2 c applesauce for margarine--If you substitute, be sure to spray cupcake liners with Pam so they don't stick (good idea anyway)

Recipe Ingredients for raisin carrot muffins

2 cups self rising flour
1 cup sugar
1 tsp apple pie spice
1/2 cup shredded carrots
1/2 cup raisins
1/2 cup chopped pecans
8 oz crushed pineapple, undrained
2 eggs
1/2 cup margarine, melted
1 tsp vanilla

Recipe Directions for raisin carrot muffins

combine flour, sugar, apple pie spice, carrots, and raisins and nuts. In a separate bowl combine melted margarine, vanilla, pineapple, and eggs. Stir into dry ingredients until just blended. spoon into muffin tins lined with cupcake liners. bake in 375 F oven 20 to 25 minutes. turn out onto rack to cool.
