Adapted from Recipes From the Moon to be vegan and wheat free. Yes, I know there are no raisins in the recipe. It's what they're called in the book.

Recipe Ingredients for Raisin-Brown Rice Muffins (vegan & wheat-free)

2 1/2 c barley flour
1/4 c ground flax seed
1 T baking powder
1/2 t salt
10 3/5 servings (2/3 cup) agave nectar
1 1/3 c soy milk
1 1/2 c cooked brown rice

Recipe Directions for Raisin-Brown Rice Muffins (vegan & wheat-free)

  1. Preheat oven to 400.

  2. Oil 12 muffin tins (or use non-stick; these definitely stick)

  3. Mix dry ingredients.

  4. Beat wet ingredients in a separate bowl until well blended.

  5. Stir rice, then dry ingredients into wet ingredients.

  6. Fill muffin tins and bake for 20 mins.

  7. let cool in the pan 5 mins before removing.
