Recipe Ingredients for Raisin Bran Muffins

2 cups sugar
5 cups flour
5 t. baking soda
2 tsp. salt
1 cup applesauce
4 eggs
3/4 cup shortening
1 quart buttermilk
7 cups bran flakes
1 1/2 cups raisins

Recipe Directions for Raisin Bran Muffins

  1. Mix buttermilk and bran flakes. Let rest for 20 minutes, stirring once. Melt shortening and let cool slightly. Add to mixture.

  2. Add sugar, applesauce, eggs.

  3. Stir together flour, salt and soda. Then add to muffins. Mix gently, Add raisins.

  4. Bake in muffin tins sprayed with non-stick spray. 400 degrees for about 15 minutes. Makes 30 muffins. Batter may be kept in refrigerator in a covered container for a several days.
