Recipe Ingredients for Raisin Bran Muffins

3 cups raisin bran
3/4 cup all purpose flour
1/2 cup whole wheat flour
1/2 cup sugar
1 1/4 tsp baking soda
1/2 tsp salt
1 egg
1 cup low fat buttermilk
1/4 cup safflower oil

Recipe Directions for Raisin Bran Muffins

  1. Mix dry ingredients

  2. Mix wet ingredients and add to dry

  3. Combine

  4. Refrigerate overnight, scoop out as many muffins as desired and bake in a 400 degree oven for 20 minutes or until done. Batter will keep in refrigerator for up to 4 weeks.
