Recipe Ingredients for Rainy day chicken

25.76 ounces chicken legs
1/2 cup of carrots
32 ounces of low sodium chicken broth
1 cup brown rice
1 tablespoon olive oil
1 tbsp of salt
1 tablespoon dried chopped basil
1 tablespoon garlic powder
1/3 cup of water

Recipe Directions for Rainy day chicken

  1. Place olive oil in a pot on medium heat

  2. Sprinkle chicken with salt and garlic powder

  3. Saute chicken with olive oil over medium heat

  4. Add chicken broth and water

  5. Boil on high for 10 minutes

  6. Turn heat to low and cover until chicken is tender

  7. Add carrots and cook for additional 5 minutes

  8. Remove chicken and carrots from broth to cool

  9. Cut chicken into small pieces

  10. Add rice and basil to broth and bring to boil

  11. Turn down heat and simmer for 20 minutes

  12. Stir in chicken and carrots

  13. Simmer 10 minutes or until rice is cooked

  14. Strain 1 cup of remaining liquid or as desired.

  15. Serve
