Vermicelli rolls with vegetables (14 small sheets of rice paper, 1 cup of vermicelli noodles, 1/4 package of tofu)

Recipe Ingredients for Rainbow Vemicelli Rolls

0.66 cup, grated Carrots
1 cup, sliced(113 g) Squash, Summer, Zucchini, Includes Skin
0.5 small Peppers, Sweet, Red
0.25 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1 serving Vermicelli
160 grams Tofu, Firm
1 tbsp Oil, Sesame
1 1tsp Oil, Sesame
1 tsp Soy Sauce
60 g Rice Paper

Recipe Directions for Rainbow Vemicelli Rolls

  1. Boil noodles. Afterwards, add 1 tsp of soy sauce and 1 tsp of sesame oil.

  2. Cut up veggies and tofu into thin strips

  3. Next, Immerse the rice paper in water for 20 seconds. This will soften the paper.

  4. Add the noodles, veggies and tofu to the paper and roll tight. Rub a bit of sesame oil on the roll to stop it from sticking to the plate.

  5. Eat with soy sauce if desired
